In this Italian-themed adventure, Gregory and his wife Claudia are not alone: by their side is Federico Galli, originally from Montecatini, a trusted friend with whom Gregory had already collaborated in the past in the restaurant world.
Federico was managing two restaurants in Amsterdam, but something clicked when Gregory presented his project. "He found it ambitious and was enthusiastic about it," Gregory recounts. Their past collaboration had already led them to success in another restaurant, so they know each other well and understand how to work together toward a common goal. They're on the same wavelength in business, a connection that has proven successful over time.
The Perfect Union of Intentions
What makes this collaboration so special? The perfect balance between vision and practicality. Gregory brings with him a long-term vision, that of a dreamer who looks far ahead. Federico, on the other hand, has his feet firmly planted on the ground, focused on the here and now. This complementarity creates a powerful synergy: ambition meets pragmatism, dreams transform into reality.
Federico decided to leave his establishments to fully join this new vision, also bringing with him his experience as the owner of a gelato shop in Italy. The formula is that of family management in the best sense of the term: Gregory in the kitchen, Federico managing the dining room, the wives handling the organization and structure of the locations. A perfect balance between skills and mutual trust.

The Zaandam location presents itself with a modern and welcoming style. Here the intimate atmosphere merges with the familiarity of a traditional osteria, where the monthly menu celebrates seasonality and quality becomes the absolute protagonist.
Amsterdam - Jordaan District: Vintage and Versatility
The new Amsterdam location, situated in the characteristic Jordaan district, embraces a vintage ambiance that perfectly reflects the essence of the neighborhood itself. The intimate environment maintains the Italian welcome and high service that characterizes the brand, but is enriched by an atmosphere that makes the space perfect for both business meetings and romantic dinners.
The more international clientele of Jordaan inspired an expanded wine list: always Italian, naturally, but with greater variety to adapt to every type of need. Beyond traditional wines, the cellar is enriched with prestigious labels such as Amarone, Barolo, and other Italian oenological excellences.

The inauguration of the Amsterdam location is set for December 4th, with opening to the public from the following day. Guests will be able to enjoy the December winter menu, the first of a long series that will accompany this new chapter in the history of Osteria Mediterranea.
Amsterdam and Zaandam represent two consolidated successes, but the gaze is already turned to the future. The objective is clear: to expand further, bringing true Italian culinary culture to new European realities, always with the same passion and dedication.

"We're studying the best locations," explains Gregory, "evaluating not only cities, but also the characteristics and structure of the establishments so they adapt to our concept." Because every Osteria Mediterranea must maintain the same quality and the same warm hospitality, while adapting to different urban realities.
There's another fundamental element in this puzzle: people. "It's important to find trusted people who adhere to our concept," Gregory emphasizes. Because a menu that changes every month, dedication to Italian cuisine only, and the balance between typical and atypical require passion, expertise, and a shared vision.
For now, attention is focused on Zaandam and Amsterdam. But the horizon is mapped out: bringing Osteria Mediterranea to other cities, each with the same soul but adapted to its own territory, all united by the mission of making the true Italy known through what it does best: welcoming and nourishing.
