A Journey Through European Pizzerias

The owner's story begins in Sicily, in the province of Catania. Due to economic challenges, he migrated to Germany where his career in the food industry began.

"I worked for several years in different branches of work until I went to work selling food products. I did an average of 200 km per day with the car, visiting shops, restaurants, and pizzerias," he explains.

This experience led him to open his first pizzeria in Germany in 1972, learning from a well-known Neapolitan pizza maker. Later, he expanded to Spain, opening a pizzeria in Madrid before returning to Germany. In 1994, he went back to Spain, and for the past 11 years, he has been running Pizzeria Vesuvio in Madrid.

The Traditional Approach

What makes Pizzeria Vesuvio unique is its commitment to tradition. As the owner describes it: "The Vesuvio pizzeria was created similar to the first one I had created in '78... a type of pizzeria where on the counter we made pizza in front of the customers."

"We don't have anything heated like many pizzerias that have early pizzas. We only make one type of individual pizza for the person who asks for it so that he can have his pizza without medium pizzas, large pizzas, meter pizzas. Our lifestyle is still the same as it was 45 years ago."

Building a Legacy in Madrid

Pizzeria Vesuvio proudly calls itself "the oldest traditional pizzeria in Madrid," maintaining its original concept where customers can watch their pizzas being made to order. This commitment to tradition has created remarkable customer loyalty.

Customer Relationships Spanning Generations

"We have customers who used to come for pizza when they were engaged and now come with their grandchildren," the owner shares proudly. This generational loyalty speaks to the pizzeria's consistent quality and service over decades.

To recognize this loyalty, the owner has created a tiered membership program:

  • Golden Member: Customers with 5-10 years of loyalty
  • Member Plus: 10-20 years
  • Serious Member: 20-30 years
  • Golden Legends: Over 30 years of patronage

Each category receives special benefits, discounts, and other advantages, further strengthening customer relationships.

Staff Loyalty as a Foundation

Another key to Pizzeria Vesuvio's success is staff retention. "Our policy has always been not to change the staff, to always maintain it. We have one who has been working with us for 44 years," the owner explains. Others have been with the business for 25, 20, and 15 years.

This approach creates continuity in the customer experience and builds trust. As the owner puts it: "It is not a McDonald's where you tell someone to cut the sandwich, put the cheese, put the meat. Here there is direct contact with the customer, and that is something you must maintain."

Maintaining Quality in a Competitive Market

When asked about the biggest challenge in running the pizzeria, the owner emphasizes staying true to their unique concept despite market pressures.

Standing Out from the Competition

The owner recounts how a competing restaurant opened nearby before COVID-19: "Customers were saying, 'Oh, they opened a competition for you.' I said, 'No, that restaurant is not competition for us.' They sell pizza, but they also sell meat, fish, and many other dishes that we don't."

This competitor had to charge higher prices to cover their diverse menu. The result? Pizzeria Vesuvio increased its business by 20% after the competitor opened.

The Recipe for Success

What makes Pizzeria Vesuvio successful? The owner offers this wisdom: "What you have to do is couple the work of the staff with the customer. If the staff is happy, they treat the customer well. If the customer is happy, they come back."

"The best advertising, the best marketing that you can do for any type of shop, not only a pizzeria or a restaurant, is to work on the workerswhat content so that they have job security. They treat the customers well, the customers come back, and we all gain."

Quality Italian Products and Specialized Menu

Pizzeria Vesuvio uses primarily Italian ingredients, maintaining quality while keeping prices appropriate for their market.

Focused Menu, High Quality

Instead of offering a wide range of dishes, Pizzeria Vesuvio focuses primarily on pizza: "95% are pizzas, 5% are lasagne and cannelloni and some pasta dishes."

This specialization allows them to maintain higher quality and freshness. The owner believes in simplicity: "The more simple you do things, the better. When I see a restaurant that has 100 dishes, I don't go in. Having experienced several years as a restaurant caterer, I know that it is difficult to maintain so many fresh products."

Gourmet Options

While maintaining their traditional approach, they've adapted to changing tastes by adding about 10 "gourmet pizzas" with more select products: "We put some arugula, pesto sauce, raw ham, as well

Conclusion

As our interview with Pizzeria Vesuvio's owner concludes, the recipe for restaurant longevity becomes clear: authenticity cannot be franchised, and tradition, when paired with consistent quality, creates an experience that customers return to for decades. In a world where restaurants frequently change concepts, menus, and staff to chase market trends, Pizzeria Vesuvio stands as a testament to the power of staying true to one's founding vision.

The pizzeria's success story challenges many modern business assumptions. Rather than expanding the menu or opening multiple locations, they've maintained a specialized focus. Instead of high staff turnover, they've cultivated decades-long employee relationships. While competitors diversify, they've doubled down on their core offeringmaking individual pizzas to order, right before the customer's eyes.

Perhaps most telling is the multi-generational loyalty they've earned, with customers who first visited as young couples now returning with their grandchildren. In an age of disruption and constant change, Pizzeria Vesuvio reminds us that some business models don't need reinventionthey simply need to be preserved and executed with care and consistency. For aspiring restaurateurs and established businesses alike, this Madrid institution offers a masterclass in creating not just a successful restaurant, but a beloved community landmark that stands the test of time.
